A few examples? LOW TEMPERATURE VACUUM COOKING & ATM PACKAGING. The first, thanks to the low and constant temperature, is able to dissolve the collagen in cuts rich in connective tissue, and, therefore, produces extremely tender and tasty meat. The second is able to guarantee a prolonged shelf life through the introduction of a certain mixture of food-safe gases into the packaging tray.
